It is harvested at the end of the season, if the season is ready, before the first buds of the first morning that are too hot appear on the branches of the maple trees. Impossible to classify it commercially, bastard syrup for some, rare and precious nectar for Quebec chefs. If you confuse it with the acrid sap syrup, it is not the black.
